Peanut Butter Chicken

Ingredients
  • 4-5 chicken breasts (boneless and skinless), cut into 1 inch by 1 inch squares
  • 3 T. garlic olive oil (or extra virgin olive oil)
  • 1 T. sesame oil
  • ¾ c. chicken broth
  • ½ c. chunky peanut butter
  • ½ c. peanuts
  • ¼ c. honey
  • garlic salt and pepper to taste (Note: use garlic salt vs. regular salt if you don’t have garlic olive oil)
  • 4 scallions, chopped
Instructions
  1. In a skillet on the stovetop over medium heat, put oils (olive and sesame) in the pan.
  2. Put chicken, peanuts and some of the chicken broth in the skillet and cook mixture over medium heat until very lightly browned.
  3. Add in chicken broth and chunky peanut butter. Stir well.
  4. Add in honey. Stir.
  5. Add in scallions and garlic salt and pepper to taste.
  6. Cook mixture on low heat for approximately 20 minutes.
  7. Serve Peanut Butter Chicken with brown or white rice or over noodles.
  8. Serve immediately!
