Lemon Lime Chicken Pita with Middle Eastern Hummus

Cooking with fresh fruits and veggies is a fantastic way to get the most nutrients from your food. Eating farm to table is also extremely flavorful! Here’s a simple recipe you can make in 30 minutes or less that you and your family can enjoy for lunch or dinner.  The seasoning for the chicken marinade is made with lemon, lime and Herbs de Provence seasoning.  Herbs de Provence (which you can by in most grocery and specialty spice stores), is a mixture of dried herbs typical of Provence, France.  This mixture customarily contains, savory, marjoram, rosemary, thyme, oregano.  For this recipe, you’ll also be making Maryann’s Middle Eastern Hummus Recipe.  For the Hummus Recipe, CLICK HERE.

Lemon Lime Chicken Pita with Hummus

Ingredients
  • 3 skinless, boneless chicken breasts, diced
  • 1-2 lemons, freshly squeezed
  • 1-2 limes, freshly squeezed
  • 1 T. Herbs de Provence
  • lemon pepper, a few dashes
  • 1 c. green pepper, sliced
  • 1 c. red pepper, sliced
  • ½ c. yellow onion, peeled and sliced
  • ¼ c. raw almonds

  • Extra virgin olive oil
  • Organic whole wheat pitas
Instructions
  1. Squeeze the juice of the lemons and limes over a large bowl. Remove any pits.
  2. Add diced chicken to the bowl.
  3. Add Herbes de Provence and a dash of lemon pepper to the bowl. Cover and refrigerate for approximately 20 minutes.

  5. Remove chicken from the refrigerator. Take off the plastic wrap or top and preserve about a ½ c. to 1 c. of the marinade juices.
  6. In a warm skillet on the stovetop add in olive oil and cook the marinated chicken until the chicken is slightly golden.
  7. Once the chicken is a little golden, add in just a little juice from the marinade.
  8. In another skillet, add in some olive oil to the pan.
  9. Sauté the red and green peppers, onion, and almonds together until slightly golden. Remove from heat when done.
  10. Cut and Warm pitas.
  11. Take pitas and spread hummus on the insides of the pitas.
  12. Add the pepper mixture and chicken into the pitas.
  13. Spread more hummus on the inside of the pitas.
  14. Serve immediately!
